when I want to connect to a "Connector" or "deal" company but have not yet identified a person there, can I add the company to a pipeline? In my prior CRM I could do that.

Yes, you can add a company/organization to the Dealflow and Fundraising pipeline. Please note that this is not possible for the Connectors and Recruiting pipeline, you can only add People to those.
Take the following steps in order to add a company/organization to the Dealflow and/or Fundraising pipeline.
-1. Click on the respective pipeline.
-2. Click on "Add Prospect" in the top-right hand corner.
-3. Fill out the company/organization name and click on "+Add Organization".
-4. Fill out any open fields with more information about the company/organization if you like.
-5. Once you're done click on "Add prospect" in the bottom right-hand corner.
Alternatively, click on the big blue plus button in the bottom right corner of your screen and click on "Add LP" or "Add Deal" to add a company/organization to the Fundraising or Dealflow pipeline.
