@Woody Butler can the text copy on the data room/files access landing page be modified?

No, the landing page isn't modifiable right now. It's pretty sparse and straightforward, for now.

Just curious, what sort of customization would you be interested in?

@Woody Butler more from a branding and language perspective, similar to the PACT landing page which can be edited.
