And also, I see you can move connectors to become investors. What if I have a connector who is also a potential investor. Should I just set them up as an investors and then move them to become a connector if they decide not to invest. Or is there a way to have them in both categories and link the contacts somehow?

To copy prospects between pipelines, select them and click "Copy to" as shown in the attached screenshot. Regarding having contacts in both categories, it's not necessary as contacts are already inherently linked. You can view people under your "Directory -> People" page and see that there is only ever one contact per person. However, a person/organization can be in multiple pipelines.
