Hi Javier, every event gets it's own pipeline, so the emails for each event are specific to that event. For example, given the attached screenshot, you could click on the "Email Templates" link underneath each event and see how the emails are available for each. If you change the emails for one event, it does not make a change for another event.
Unfortunately there is no library of variable definitions, though this is a good idea! The easiest way to understand variables is to send yourself a test email. You can also see how the variables pre-populate in the pipeline before hitting send.
